I’m craving….Rocky Road

I love to cook, 90% of our meals are made from scratch and I really enjoy creating new recipes and hiding out in our kitchen. Hand in hand with cooking is baking…I loooove to bake but don’t allow myself to do this often as I have a massive sweet tooth and I know, I’ll just end up eating the whole cake myself! So I only allow myself to create something naughty when I know I will be forced to share with others!

I have had a big big craving for Rocky Road recently, the thought of biscuit smothered in chocolate enriched with butter and syrup- bad huh?! The temptation too much, I decided to create a big ol’ slab of Rocky Road with the promise I’d take it into work and share it- meaning I could get my guilt-free bake on!

Now….. Rocky road technically isn’t tricky baking, I know, but its easy and delicious so it’s perfect in my eyes

If you fancy making so of this gorgeous tray bake, then here are the details:

Ingredients:

  • 150g butter
  • 350g chocolate (your choice milk or dark)
  • 4 tbsp golden syrup
  • 250g biscuits (I love digestives)
  • Marshmallows, nuts, raisins, Smarties or anything else you fancy popping in
  • 100g white chocolate to decorate (optional)
Method:
First I melted the butter, chocolate and syrup together in a bowl over a sauce pan over boiling water, keep this on a low heat and stir (try not to spoon into mouth) Next I put my biscuits into a plastic bag and bash away until I have different size chunks.
Then I pour the biscuit chunks into the melted chocolate mixture, add the marshmallow or any extras you have then stir away.   Spoon the mix into a tin lined with baking paper and pop into the fridge for approx. 2 hours.

After an hour I melted white chocolate and drizzled this all over for some extra naughtiness, then popped the mixture back in the fridge

Once the 2 hours are up, cut into Rocky Road slices and obviously test one yourself to make sure they are as amazing as you imagined!!
